The Dover Kitchen: Chimichurri Grilled Chicken with CubanStyle Smashed Yuca and Black Beans

This healthy and delicious recipe is a fusion of Argentinian

& Cuban descent. A wide range of flavors and textures will

indulge your tastebuds as you take a bite of each dish, all

while satisfying your caloric needs without going overboard.


Ingredients


Grilled Chicken + Chimichurri

• 4 boneless chicken thighs or breasts – $6

• 2 tbsp olive oil – $0.40

• 1 tsp paprika – $0.10

• 1 tsp cumin – $0.10

• Salt & pepper – $0.05


Chimichurri Sauce:


• 1 cup fresh parsley – $1

• 3 garlic cloves – $0.30

• 2 tbsp red wine vinegar – $0.30

• 1⁄2 cup olive oil – $1.50

• 1⁄2 tsp red chili flakes – $0.10

• Salt & pepper – $0.10


Cuban-Style Mashed Yuca


• 2 lbs yuca (cassava), peeled and cubed – $3

• 4 garlic cloves – $0.40

• 1⁄4 cup olive oil – $0.75

• 1 medium onion (sliced) – $0.50

• Juice of 1 lime – $0.50

• Salt – $0.05


Cuban-Style Black Beans


• 1 can black beans (15 oz) – $1

• 2 garlic cloves – $0.20

• 1⁄2 small onion, finely chopped – $0.25

• 1 tsp cumin – $0.10

• 1 tbsp olive oil – $0.20

• Salt & pepper – $0.05


Total Cooking Time: ~1 hour


Estimated Total Cost: $16 ($4 per serving)


Instructions


1. Grilled Chicken:

1. Mix olive oil, paprika, cumin, salt & pepper in a bowl.

2. Rub mixture over chicken and let marinate for at least 15 minutes (or up to overnight).

3. Grill over medium-high heat 6–7 minutes per side or until internal temp hits 165°F.

4. Rest 5 minutes before slicing.


Chimichurri Sauce:


1. Blend or finely chop parsley, garlic, vinegar, chili flakes, salt & pepper.

2. Slowly mix in olive oil to emulsify.

3. Taste and adjust seasoning. Let sit for 10+ mins.


Mashed Yuca:


1. Boil yuca in salted water until fork-tender (20–25 minutes).

2. While it boils, sauté garlic and onions in olive oil until golden.

3. Drain yuca, remove any tough fibrous core.

4. Mash with lime juice and sautéed garlic/onion oil. Salt to taste.


Black Beans:


1. Sauté garlic and onion in olive oil until translucent.

2. Add drained beans, cumin, salt & pepper.

3. Simmer for 10–15 minutes, adding a bit of water if needed.
